Main Ingredients
- 2 tablespoon olive oil
- 1 unit onion, chopped
- 3 cloves garlic, minced
- 500 g mushrooms, sliced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 liter vegetable broth
- 200 ml coconut milk
- unit Salt and pepper to taste
Heat olive oil in a pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Add sliced mushrooms, thyme, and rosemary. Cook until mushrooms are soft.
Pour in vegetable broth and bring to a boil.
Reduce heat and simmer for 20 minutes.
Stir in coconut milk and season with salt and pepper.
Use an immersion blender to blend the soup until smooth.
Serve hot.
