Main Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup green beans, chopped
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 can diced tomatoes 14 oz
- 4 cups vegetable broth
- 1 tablespoon curry powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until softened.
Add carrots, celery, bell pepper, zucchini, green beans, cauliflower, and broccoli. Cook for 5-7 minutes.
Stir in diced tomatoes, vegetable broth, and curry powder. Bring to a boil.
Reduce heat and simmer for 20 minutes, or until vegetables are tender.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
