Main Ingredients
- 2 units Carrots peeled and chopped
- 2 units Zucchini chopped
- 1 unit Onion quartered
- 3 cloves Garlic peeled
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 6 cups Water
Preheat your oven to 400°F (200°C).
Place the carrots, zucchini, onion, and garlic on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
Roast the vegetables in the preheated oven for 25-30 minutes, until they are tender and slightly charred.
Transfer the roasted vegetables to a large pot. Add the water and bring to a boil.
Reduce the heat and let it simmer for 15 minutes. Adjust seasoning if needed.
Serve hot and enjoy your roasted vegetable broth!
